Shrimp, artichoke bottoms, tomatoes, mushrooms and penne

Recipe Ingredients for Shrimp with Penne

2 oz Whole Wheat Penne Rigate about 2/3 cup
8 oz Raw White Shrimp
3 pieces canned Artichoke Bottoms
1 cup pieces canned Mushrooms
1 cup 100% Natural Petite Diced Tomatoes
1 1tsp Olive Oil
1 slice onion
2 cloves garlic
1 teaspoon Italian seasoning

Recipe Directions for Shrimp with Penne

  1. 1. Boil salted water for pasta. Begin cooking pasta.

  2. 2. Saute the onions and artichoke pieces in olive oil for 2 min. Add chopped garlic and mushrooms, saute until onion and artichoke tender.

  3. 3. Cook pasta until al dente. Drain and reserve some cooking water.

  4. 4. Add peeled shrimp pieces to tomato mixture, cover and continue cooking until shrimp cooked through (about 3-4 minutes).

  5. 5. Add cooked pasta to tomato and shrimp mixture along with reserved pasta water as needed. Cook until pasta is tender.
