Shrimp Penne Salad with Green Beans Recipe

Recipe Ingredients for shrimp and penne pasta

16 oz penne
1 1/4 lb shrimp
2 c. green beans
1 medium onion
1/4 c. fresh basil
1/4 cup fresh parsley
4 tbls olive oil
2 tbls red wine vinegar
1 clove garlic
1/2 tsp salt
1/4 tsp black pepper

Recipe Directions for shrimp and penne pasta

  1. To quickly prepare the beans, trim just the stem ends, leaving the tapered blossom ends intact. Line up 5 or 6 beans at a time and cut them roughly the same length as the pasta.

  2. Cook pasta in boiling water 7 minutes. Add green beans; cook 4 minutes. Drain and rinse with cold water; drain.

  3. Combine pasta mixture, cooked shrimp, onion, basil, parsley, and bell pepper in a large bowl, tossing gently to combine.

  4. Combine oil and remaining ingredients in a small bowl, stirring with a whisk. Drizzle over pasta mixture; toss gently to coat.

  5. (Roasted red bell peppers add about 50 calories per serving - calorie count couldn't find ingredient for analysis)
