Recipe Ingredients for Shrimp with Peanut Sauce over Shirataki

2 tbsp Better 'n Peanut Butter Regular Creamy
1/4 cup Lite Coconut Milk
134 g limes
1/2 tablespoon soy sauce
2 g Truvia
1/4 teaspoon ground ginger
1 garlic cloves
1/4 teaspoon red pepper flakes
8 oz shrimp
8 oz Tofu Shirataki (Spaghetti Shaped Noodle Substitute)
6 sprigs cilantro

Recipe Directions for Shrimp with Peanut Sauce over Shirataki

  1. Juice one lime to yield 1 tablespoon of lime juice.

  2. Dice the garlic clove.

  3. Mix the lime juice, peanut butter, coconut milk, soy sauce, Truvia, ground ginger, garlic, and red pepper flakes.

  4. Reserve 1/4 of the sauce to marinate the shrimp and refrigerate the remaining 3/4 of the sauce.

  5. Thaw shrimp and marinate in remaining sauce for 1 hour.

  6. Rinse the Tofu Shirataki thoroughly. Par boil them for 2 minutes until they reach the desired consistency.

  7. Drain the Shirataki.

  8. Sautee the shrimp over medium heat until almost thoroughly cooked. Add the remaining peanut sauce and the Shirataki noodles. Toss until combined.

  9. Cut the remaining lime into wedges.

  10. Serve with cilantro and lime wedges.
