Recipe Ingredients for Shrimp with pappardelle

2 T olive oil
1 clove garlic
1 lb shrimp
1/4 c white wine
3/4 c chicken broth
2 large eggs
2 T parmesan
1 t basil
1/2 t salt
1/4 t pepper

Recipe Directions for Shrimp with pappardelle

  1. cook pappardelle according to package directions

  2. Heat the oil in a large nonstick skillet over med heat. Add garlic and saute until soft. Add shrimp and cook until opaque, 2-3 mins. Add wine; bring to a boil, then add chicken broth.

  3. In a small bowl, beat eggs and cheese; gradually whisk 1/2 cup of the hot broth into the egg mixture. Pour the egg mixture into the skillet, whisking constantly. Reduce heat and stir in pappardelle; cook, stirring, until sauce thickens and pasta is heated through, 2-3 mins. Remove from heat and sprinkle with fresh basil, salt and pepper, toss to combine.
