Recipe Ingredients for Shrimp Pad thai

24 1/2 oz cooked rice noodles
8 oz shrimp
3 3/8 oz sliced baby carrots
3 oz onions
1 1/2 oz dry roasted peanuts
2 large eggs
6 tbsp thai kitchen pad thai sauce
1/4 cup chopped cilantro
1 garlic clove
1 tbsp smart balance

Recipe Directions for Shrimp Pad thai

  1. bring large pot of water to a rolling boil.

  2. in a small bowl, marinate thawed shrimp with 1 clove pressed garlic, salt, pinch of cilantro, 1 red chili. Set aside.

  3. heat wok on med high

  4. add 1/2 tbsp smart balance to wok

  5. scramble 2 eggs & stir fry in wok

  6. set aside scrambled eggs - salt to taste

  7. add rice noodle to boiling water, set timer for 6 mins

  8. add 1/2 tbsp smart balance to wok

  9. add sliced carrots & stir fry for 2 mins

  10. add onions & stir fry until tender

  11. strained cooked noodles, and rinse with cold water

  12. add marinated shrimp to wok, stir fry for 1 min (or until 1/2 cooked)

  13. add cooked noodles, thai kitchen sauce, and chili garlic paste if needed.

  14. When heated thru & fully mixed, add scrambled eggs, chopped cilantro, chopped peanuts.

  15. garnish with 1 lime wedge and/or extra cilantro
