A healthy scampi dish that is quick and easy.

Recipe Ingredients for Shrimp & Orzo w/Escarole

4 tbl butter
4 cloves garlic, chopped
1/2 c onion, chopped
1/2 tsp parsley
4 c escarole, roughly chopped
8 oz shrimp
1 c orzo
1 c chicken stock

Recipe Directions for Shrimp & Orzo w/Escarole

  1. Preheat oven to 350 degrees. (This works perfectly in a toaster oven.)

  2. Prepare orzo pasta according to directions on package. About two minutes before pasta is done add escarole to pasta water.

  3. While pasta is cooking place butter, onions, garlic, and parsley in a large microwaveable bowl. Melt butter in 30 sec intervals until completely melted. Remove and add stock and shrimp (I use cooked, frozen medium shrimp.). Place in oven for 10 minutes.

  4. Drain pasta and escarole in a bowl. Pour scampi mix over pasta.
