Recipe Ingredients for Shrimp and okra gumbo

4 tablespoons vegetable oil
3 pounds okra, sliced
2 medium onions, diced
1 bell pepper, chopped
1 stalk celery, chopped
4 cups vegetable broth
2 pounds shrimp
3 tablespoons Cajun seasoning

Recipe Directions for Shrimp and okra gumbo

Heat heavy pot over medium heat. Add oil and okra, stir until mucilage cooks out, about 20 minutes. Add celery, pepper, and onion, cover and cook 20 minutes, stirring occasionally. Add broth and simmer 20 minutes. Season shrimp and add to pot. Cook 15 minutes or until shrimp is pink. Serve over cooked rice.
