Shrimp and Mushroom Manicotti with a homemdade alfredo sauce

Recipe Ingredients for Shrimp and Mushroom Manicotti

225 g Manicotti
16 oz Shrimp, large
15 oz Ricotta cheese, part skim
8 oz Mozzarella cheese, part skim
4 oz cheddar cheese
51 tbsp Heavy Cream, Whipping
8 oz Mushrooms, sliced
1 egg
4 tbsp garlic, minced
4 tbsp scallions, minced
2 tbsp onion, minced
2 tbsp basil, fresh

Recipe Directions for Shrimp and Mushroom Manicotti

  1. Cook the Manicotti according to the instructions on the package.

  2. Mix egg, salt, pepper, Ricotta cheese, 7 oz of mozzarella cheese together.

  3. Saute shrimp, onion, scallion, garlic in butter until just pink, then add the Heavy Cream and bring to a slight boil. Turn to medium and let simmer.

  4. Stuff the manicotti shells with the cheese mixture and place them in a 9x13 baking pan. Pour the shrimp alfredo sauce over the noodles.

  5. Sprinkle remaining cheese on the top. Cover with foil.

  6. Bake at 350 for 20 minutes or until bubbly.
