Spinach fettuccine adds a little bit of sweetness as well as flavour.

Recipe Ingredients for Shrimp & Mushroom Alfredo

3 tbsp olive oil
1 can mushroom soup
6 oz 2% milk
1/3 cup grated parmesan cheese
1 small onion, coarsely chopped
1/2 lb prawns, cut into thirds
1/2 lb prawns, whole
1/2 lb mushrooms, sliced
5 cloves garlic, minced
3 oz spinach fettuccine
3 oz fettuccine

Recipe Directions for Shrimp & Mushroom Alfredo

  1. Saute onion, garlic and mushrooms until onion is translecent but still slightly crisp. Add cut up prawns and continue to saute until prawns turn opaque. Remove from heat.

  2. In a large saucepan over medium heat combine mushroom soup, milk and parmesan cheese stirring occassionaly until mixture boils.

  3. Reduce heat and stir in mushroom and prawn mixture.

  4. Simmer stirring frequently while pasta cooks.

  5. Cook fettucine according to package directions then drain.

  6. A few minutes before the fettuccine is finished cooking saute the whole prawns.

  7. Serve sauce mixture over fettuccine and top with sauted prawns.

  8. Garlic toast goes good with this recipe.
