Macaroni and vegetables. Makes a good luch for taking to the office. Chicken or lean ham can be substituted for the shrimp, and the vegetables can be whatever you have on hand.

Recipe Ingredients for Shrimp and Macaroni Salad

1 1/2 cups dry macaroni, cooked
1/2 cup cheddar cheese, grated
1/2 pound shrimp, cooked
2 tomatoes, chopped
1 red bell pepper, diced
2 stalks celery, diced
1 cucumber, diced
1 cup frozen peas, thawed
1 tablespoon flaxseed oil
1 tablespoon olive oil
3 tablespoon lemon juice
1/4 cup fresh parsley, chopped

Recipe Directions for Shrimp and Macaroni Salad

Cook macaroni according to package directions. Mix all ingredients except oils and lemon juice. Stir well. Whisk together oils and lemon juice, and parsley. Pour over the top.
