Shrimp Lo Mein from Best Chinese Recipes ever

Recipe Ingredients for Shrimp Lo Mein

2 1/2 tbsp. Soy Sauce
8 oz Shrimp
8 oz egg Noodles
1 1/2 tbsp. Peanut Oil
3 cups Onion
2 cups Red Bell Pepper
5 cups Broccoli Florets
1 tbsp. fresh Ginger, peeled & minced
1 tbsp. fresh Garlic, minced
1/4 tsp. Salt
3/4 cup Chicken Broth
1/4 cup Cashews, unsalted

Recipe Directions for Shrimp Lo Mein

  1. Add the shrimp and soy sauce in a bowl, and cover. Refrigerate for 30 minutes. Sieve the soy sauce from the bowl, but save it.

  2. Prepare the noodles from the packages directions. Toss the cooked noodles with 1 tsp of oil, and set aside.

  3. In a wok, over medium-high heat, add 2 tsp. of peanut oil, and add the onion, stir-frying for 3 minutes. Add the pepper and broccoli, for another 3 minutes of stir-fry. Then add the ginger and garlic, and constantly stir for another minute. Remove the vegetable mixture from the wok.

  4. Head 1 1/2 tsp. of peanut oil to the wok, and add the shrimp, stir-fry for a minute. Add the reserved soy sauce, salt, and broth, until it boils. Add the noodles, vegetables, and the nuts, combining well.
