Recipe Ingredients for Shrimp Linguine

350 g Linguini
340 g shrimp
1 orange bell pepper
2 green onions
3 cloves garlic
1/2 zucchini
1 tomato
2 tbsp oil
40 g vegetable stock (serving)
5 basil leaves

Recipe Directions for Shrimp Linguine

Grill zucchini, pepper and tomato on grill for 10 minutes on med-high heat, remove, cool and dice. In a pan, heat oil, add white part of green onion and garlic, fry for a few minutes, and cook linguine until al dente. Add the vegetables to the garlic, and add stock. Cook on low for 5 minutes. Grill shrimp for 2 minutes, then add to pan with green part of onion and basil, torn. Toss with cooked linguine.
