Recipe Ingredients for Shrimp with Linguine

1 lb medium shrimp
1 cup carrots, coarsely chopped
2 plum tomatoes, seeded & diced
1/2 c green onion, sliced
1/3 c parmesian cheese, grated
12 oz linguine, whole wheat cooked
2 tbsp butter
1 tsp olive oil
2 cloves garlic
3/4 c evaporated milk
1/2 c fat free sour cream
1/4 c fresh basil, snipped
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for Shrimp with Linguine

  1. Peel & devein shrimp, remove tails (or thaw if using cooked frozen).

  2. Dice Tomatoes

  3. Grate Parmesian cheese

  4. Cook pasta as directed, drain, add 1/4 c pasta water & 2 butter & set aside (keep warm).

  5. Saute carrots, shrimp & garlic over med heat 3-4 min. Remove from an & keep warm

  6. Gently heat sour cream & milk over low heat (do not boil) Add parm cheese & stir until smooth.

  7. Add rest of ingredients & heat through.

  8. Serve while hot.
