Recipe Ingredients for Shrimp Lasagna Rolls

1/2 lb pasta (7-8 sheets)
15 oz part skim ricotta
1 cup low fat mozzarella
1/2 cup parmesan
1/2 lb shrimp
1 cup spinach
2 cups tomato sauce
1 tbsp olive oil

Recipe Directions for Shrimp Lasagna Rolls

Cook pasta until flexible but still al dente in oiled water (the oil helps prevent sticking!). Meanwhile, sautee salt and pepper seasoned shrimp 3-4 minutes or until just cooked in olive oil with 1-2 cloves of garlic and red pepper flakes, if desired. Combine ricotta, parmesan, and spinach or other vegetables and herbs (ie: parsley, basil) with a bit of salt and a few teaspoons of tomato sauce. Chop shrimp once cooked and cooled, and add to ricotta mixture. Remove pasta from water and lay on lightly greased large cookie sheet in rows. Once cooled, put 1/4 cup ricotta mixture in center of noodles and spread across. Put a small amount of tomato sauce in bottom of a baking dish. Roll up lasagna noodles and place seam-side down in dish. Top with sauce and mozzarella. At this point, can refrigerate for next day. Bake uncovered 30 minutes at 350, or 45 minutes if refrigerated first.
