A little spicy traditional Southern recipe. I use Rotel tomatoes for the spice! Ok, you only really use 1 cup of dry grits but Calorie Count kept using hominy and the calories were off. I had to improvise...

Recipe Ingredients for Shrimp & Grits

8 oz shrimp
4 cup dry grits
3 cups water
1 1/4 cup reduced fat cheddar cheese
1/2 cup diced tomatoes
1/4 cup skim milk

Recipe Directions for Shrimp & Grits

  1. Remember only use 1 cup dry grits!

  2. Cook grits according to directions. While grits are cooking, cook shrimp in a pan. Add the cheese, milk, tomatoes into the grits when ready and combine. Top of with shrimp and serve!
