Oriental spicey shrimp with lots of veggies

Recipe Ingredients for Shrimp in Garlic Sauce (Oriental)

1 1/2 lb shrimp
1 egg white, beaten
1/2 tsp salt
1 tbsp cornstarch
1 tbsp dry white wine or sherry
2 tbsp chives
1 tsp fresh ginger
2 c broccoli
2 c snow peas
1 c carrots, sliced
1/2 red bell pepper, thinly sliced
2 tbsp green onions, chopped
1/2 c shitake mushrooms
5 oz bamboo shoots, canned
5 oz water chestnuts, canned
1/2 c broth
1/2 c water
3 garlic cloves, minced
1/2 tsp salt
1/4 c lite soy sauce
1 tbsp sesame oil
2 tsp sugar
1/4 tsp red pepper flakes
2 tbsp olive oil, divided, for stir frying

Recipe Directions for Shrimp in Garlic Sauce (Oriental)

  1. Marinate shrimp in first 6 ingredients for at least 15 min. While you wait, prepare the veggies (next 8 ingredients), and combine next 8 ingredients for sauce, except garlic.

  2. Remove shrimp from marinade, and stir fry in 1 tbsp. oil until pink, about 5 minutes. Remove from pan.

  3. Add second tbsp. of oil to pan. Add veggies, and stir fry until tender-crisp. Remove from pan.

  4. Add garlic to pan and stir fry 20 sec. Add other sauce ingredients and bring to a boil.

  5. Add shrimp and veggies back to the pan and stir gently to mix and coat with sauce. Serve with rice.
