Easy to make and quite delicious. Tastes even better as leftovers!

Recipe Ingredients for Shrimp Fried Rice

1 sweet onion, chopped
4 oz baby corn
4 oz water chestnuts
2 eggs
4 serving (Meijer) Green Peas, Frozen
2 serving (Meijer) Long Grain Instant Brown Rice
18 oz small shrimp
1 serving (Sun Bird) Fried Rice Seasoning Mix
4 serving (Bertolli) ICBINB, Olive Oil, Light
1 serving (Pearson) Bean Sprouts

Recipe Directions for Shrimp Fried Rice

  1. Cook 4 cups of brown rice and 3 cups of frozen peas in separate pots. No need to fully cook since everything will cook additionally in large pot once complete, but get them close to done.

  2. Chop 1 large sweet onion and saute in 2 tbsp I can't believe it's not butter, light. Add to large pot on low heat.

  3. Saute baby corn and water chestnuts in tbsp I can't believe its not butter, light. Add to large pot with onions.

  4. Once rice is near cooked add to vegetables in large pot followed by peas and bean sprouts. Stir and mix.

  5. Add precooked baby shrimp and seasoning mix. Stir and mix.

  6. Cover pot with lid on low heat while heating medium size skillet to medium heat to cook the eggs. Beat the eggs and pour into skillet. Once cooked, roll up egg and cut into strips. Add to large pot.

  7. Cook everything in low heat until rice is fully cooked.

  8. Enjoy!
