I leave out the egg to lower the cholesterol. You can also add water chestnuts, bamboo shoots, baby corn ears or other oriental flair! This is just the bare bones

Recipe Ingredients for Shrimp fried rice

4 cups brown rice
1 cup chopped broccoli
1/4 medium onion
1 cup sliced carrots
1 pound shrimp
6 tbs low sodium soy sauce
4 tbs country crock
2 tbs minced garlic
1/2 cup chopped mushrooms

Recipe Directions for Shrimp fried rice

  1. *This is four cups of cooked brown rice. I prefer mine almost done and chilled before I start.

  2. Parboil the carrots and broccoli until they are almost done. While you are doing that, saute the mushrooms, garlic and onion in half the soy sauce and half the country crock. If they start to run out of moisture before they're done, add small amounts of warm water.

  3. Add the carrots and broccoli to the other vegetables and finish cooking until tender crisp or desired texture.

  4. Add the rice, shrimp and the rest of the soy and the country crock, cook over medium heat until well blended and hot.

  5. Makes 8 3/4 to 1 cup servings.
