Shrimp "Fried" Rice Recipe

The calorie count on this is too high because this system won't find fat-free balsamic vinaigrette. So, the calories given here are for the full-fat dressing. Add more veggies and beaten egg whites to make it more of an authentic stir-fried rice.

Recipe Ingredients for Shrimp "Fried" Rice

36 shrimp
4 carrots
1 red bell pepper
1/2 red onion
8 oz balsamic vinaigrette, non fat
8 oz light soy sauce
4 cups brown rice

Recipe Directions for Shrimp "Fried" Rice

  1. Marinate shrimp in a ziploc bag w/ the balsamic vinaigrette and soy sauce (note: I use fat free dressing - this calorie counter won't find it so the calories given for the count here are for the full-fat dressing).

  2. Add crushed or minced garlic and crushed ginger (per your own taste).

  3. Marinate in the frig for 30 minutes.

  4. Using some of the marinade, saute over medium high heat, the shredded carrots, finely chopped bell pepper, and finely chopped onion. You can add any other veggies you'd like and it won't affect the calorie count too much.

  5. Cook 5 minutes.

  6. If you'd like, add up to one cup of egg substitute or 4 egg whites well beaten and stir until it is cooked.

  7. Add the shrimp and all the marinade and cook about 5 minutes, until shrimp are no longer pink.

  8. Add the cooked rice (note that 4 cups uncooked rice becomes 8 cups of cooked) and reduce the heat to low.

  9. Stir to mix well.

  10. Season to taste with additional light soy sauce, crushed or powdered red pepper, black pepper, garlic powder, onion powder, then mix well.

  11. Add sesame seeds (2-3 tablespoons), chopped cilantro (1/2 cup), and the juice of one lime.

  12. Mix well and remove from heat.

  13. Enjoy!
