5 oz Spinach
0.5 cup, pieces or slices Mushrooms
6 oz Tomatoes
1 small Onions
1 medium raw Bell Pepper Green
12 0z Cooked Shrimp
4 tbsp White Wine Vinegar, Organic
16 grams Lemon Juice
1.5 tsp Classic Dijon Mustard
1 tbsp Extra Virgin Olive Oil
1 dash Salt, Table
1 dash Pepper, Black

Recipe Directions for Shrimp and Fresh Herb Salad

  1. Ingredients:

  2. ? 5 ounce fresh spinach

  3. ? 4 ounces mushrooms, sliced

  4. ? 6 ounces cherry tomatoes, halved

  5. ? 1 small red onion, sliced

  6. ? 1 small red bell pepper, sliced

  7. ? 12 ounces cooked shrimp meat

  8. ? 4 tablespoons white wine vinegar

  9. ? 2 tbsp lemon juice

  10. ? 1 1/2 tsp Dijon mustard

  11. ? 1 1/2 tbsp extra-virgin olive oil

  12. ? Salt and pepper to taste

  13. Preparation:

  14. Rinse and dry salad leaves and divide among four plates. Add sliced mushrooms, cherry tomatoes, red onion and pepper strips. Spoon equal amounts of shrimp meat on top of salad.
