Classic South Louisianna dish. NOT a health conscious dish but it is oh so good. Two sticks of butter, count 'em TWO!

Recipe Ingredients for shrimp ettouffe

24 oz Shrimps
2 medium (2-1/2" dia) Onions
2.5 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
8 stalk, medium (7-1/2" - 8" long) Celery
2 stick Butter
1 cup Enriched Unbleached White Flour
1 tablespoon Thyme
8 cup Fish Stock

Recipe Directions for shrimp ettouffe

  1. In heavy skillet (preferably cast iron) Melt 1 1/2 sticks of butter and slowly stir in cup of flour stir until smooth. While this is cooking (this is your roux, the base for most Creole cooking) chop you veggies and saute in 1/2 stick of butter.

  2. Keep stirring roux

  3. Peel shrimp and set aside

  4. Keep stirring roux

  5. Heat up 2 quarts of fish stock

  6. keep stirring roux until it is a deep rich chocolate brown, not burned but well toasted.

  7. Add stock to veggies

  8. Add roux to veggies/stock

  9. Turn off heat and add raw shrimp

  10. finish with sprigs of fresh thyme and cayenne pepper to taste.

  11. Serve of buttered long grain rice
