Recipe Ingredients for Shrimp Etouffee

6 tbsp. Butter or margarine
6 tbsp. Flour
1 c. Chopped onions
1/2 c. Green onions
2 c. Celery, sliced
1 tsp. Tomato paste
2 c. Fish stock (chicken stock may be used)
1 c. Diced tomatoes
1/4 c. Chopped parsley
1 pound Shrimp, cut in pieces
1 1/2 tsp. Salt
1/2 tsp. Black pepper
1/4 tsp. Cayenne pepper
2 cloves minced garlic

Recipe Directions for Shrimp Etouffee

Melt butter, remove from heat, stir in flour till smooth. Return to heat, stir for 10 minutes till roux is dark brown. Stir in onions and celery, cook about 10 minutes. Add tomato paste to fish stock, then stir in roux. Add diced tomatoes, shrimp, parsley, and seasonings. Cover and simmer 20 minutes, stirring occasionally. Serve over rice.
