Shrimp and spinach enchiladas with a creamy green salsa sauce.

Recipe Ingredients for Shrimp Enchiladas Suizas

28 ounces salsa verde
3 green onions
1 cup heavy cream
1 cup chicken broth
1/2 tsp. salt
1/2 tsp. black pepper
1 lb shrimp, peeled and chopped
8 ounces spinach, cleaned and chopped
2 tsp. grapeseed oil
12 Sprouted Corn Tortillas
8 ounces Fancy Monterey Jack Shredded Cheese
1/2 cup sour cream

Recipe Directions for Shrimp Enchiladas Suizas

Heat salsa over medium heat, when bubbling add cream and chicken broth and reduce heat. In saute pan with lid add shrimp and spinach and heat covered until spinach is wilted. Add a few drops of oil to a small saute pan over medium heat. Add tortillas one at a time for 10 seconds at a time, adding oil in between to make the tortillas more flexible. Fill each tortilla with shrimp and spinach and a couple of tablespoons of cheese then roll and place in glass pan, folded side down. Pour salsa over the top and add remaining cheese. Bake at 400 degrees for 20 minutes. Serve with sour cream.
