Recipe Ingredients for Shrimp Enchiladas

6 corn tortillas
8 oz frozen shrimp
1 cup enchilada sauce, hot
1/2 cup fresh spinach, chop
1 celery stalk, diced
2 garlic cloves, pressed
6 oz shredded cheddar cheese
6 large black pitted olives, diced

Recipe Directions for Shrimp Enchiladas

  1. Spray a non-stick skillet and sautee the frozen shrimp, chopped spinach, celery, garlic and olives.

  2. In a seperate pan, heat the enchilada sauce.

  3. Heat tortillas on a comal.

  4. Dip each tortilla in enchilada sauce, fill with spoonful of shrimp mix and cheese, roll up and place fold side down in a baking dish.

  5. Top with the leftover shredded cheese and bake at 325 for 15-20 minutes.
