My favorite egg salad recipe! I add pepper and dill for an extra kick, on occasion. Delicious on its own, in a salad of mixed greens, in a sandwich, or on an english muffin in the morning.

Recipe Ingredients for Shrimp Egg Salad

8 large Egg, Whole
12 oz Large Shrimp
1 1/2 large Onions, Spring Or Scallions
3 serving Mayonnaise
3 tsp Honey

Recipe Directions for Shrimp Egg Salad

  1. Prepare ingredients: Dice the garlic, devein and shell the shrimp (thaw if frozen), and chop the onions and celery. Combine the garlic and shrimp. Set other ingredients aside

  2. Hard boil the eggs

  3. Heat a large skillet on high heat, with a drizzle of olive oil

  4. When the pan is hot, add the shrimp and garlic. Cook 2-4 minutes, stirring occasionally, until pink.

  5. When the eggs and shrimp are cool enough to chop, cut the shrimp into small pieces

  6. Mash the eggs in a bowl until in crumbles. Combine all ingredients in a large bowl, adding the may, paprika, pepper, onions, celery, and mustard. Stir until blended. Chill until cold, and then it is ready to serve.
