A lighter version of a family favorite

Recipe Ingredients for Shrimp Diane

2 tbsp Extra Virgin Olive Oil
1 tbsp Butter
2 cup, diced Mushrooms, Portabella
1/2 medium (2-1/2" dia) Onions
8 fl oz Organic Low Sodium Chicken Broth
1/4 tsp Sea Salt
1/2 tsp Pepper, Black
1/4 tsp Cayenne Pepper
1 oz Wine
12 oz Shrimp Fresh Seafood

Recipe Directions for Shrimp Diane

  1. heat olive oil and butter over med high heat. Add onion and cook until soft. Lower heat and continue cooking until onion begins to carmelize.

  2. Raise heat to med. high and add mushrooms. Cook 2 minutes.

  3. Add Shrimp (6 per person) and cook 2-3 minutes. Add salt peppers and garlic, then broth and wine. boil to reduce slightly. Serve over pasta.
