Recipe Ingredients for Shrimp curry rice salad

2 cups white rice
1/2 cup white onion
1 cup spinach leaves, chopped
2 tbsp yellow curry paste
1/4 cup cranberries, dried
1/4 cup yogurt, lowfat plain
4 oz shrimp, packed in water
1 salt
1 pepper

Recipe Directions for Shrimp curry rice salad

  1. 2 cups of cooked white rice

  2. 1/2 cup white onion chopped

  3. 1 cup spinach chopped

  4. 2 tbsp yellow curry paste

  5. 1/4 cup cranberries, dried

  6. 1/4 cup yogurt, low fat palin

  7. 4 oz shrimp, cooked packed in water

  8. mix together well

  9. salt and pepper to taste

  10. chill for two hours before serving
