Delicious and Easy shrimp and crab enchiladas, adjusted to make topping with sour cream not part of the nutritional values. You can substitute chicken for any or all of the seafood.

Recipe Ingredients for Shrimp & Crab Enchiladas, Adjusted

12 flour tortillas
16 ounces Monterey Jack cheese, shredded
1 pound imitation crab meat
1 pound cooked shrimp
19 ounces green enchilada sauce
1/4 cup green onions, chopped

Recipe Directions for Shrimp & Crab Enchiladas, Adjusted

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Mix together cheese, crab meat, shrimp, and green onions.

  3. Lay tortillas on a flat surface. In the middle of each tortilla place a portion of the cheese and meat mixture. Roll the tortillas to form enchiladas. Arrange side by side in a 9x13 inch baking pan.

  4. Pour green enchilada sauce over all of the enchiladas; the green sauce should cover the enchiladas completely. Sprinkle any leftover filling mixture over the enchiladas.

  5. Cover, and bake for 30 minutes in the preheated oven. Remove cover, and continue baking 15 minutes.
