Lively Shrimp & Corn Salsa Combo

Recipe Ingredients for Shrimp & Corn Salsa Wraps

1 c nonfat yogurt
2 tbs lime zest
2 tbs fresh mint, chopped
1 tbs lime juice
1/2 tsp chili powder
1/2 tsp salt
1 pepper to taste
1 lb large shrimp, peeled & deveined
1 c corn
1 c tomato, seeded & diced
1 avocado, diced
2 scallions
2 tbs mint
1/2 tsp jalepeno pepper
1 tbs lime juice
1/4 tsp ground cumin
4 tortillas, whole wheat [i146457]
2 c shredded lettuce

Recipe Directions for Shrimp & Corn Salsa Wraps

  1. Combine yogurt, zest and mint, refrigerate.

  2. Combine lime juice, chili powder, salt, and pepper. Add the shrimp and let marinate for 15 minutes at room temperature.

  3. Meanwhile, combine the corn salsa ingredients (corn, tomato, avocado, scallions, mint, jalepeno, lime juice, cumin) and set aside.

  4. Take shrimp out of marinade, cook in large non-stick skillet over medium heat, 2 minutes per side.

  5. Assemble wraps; serve immediately.
