Recipe Ingredients for Shrimp and Corn Salad

3 ears corn, to form 2 cups
1 pint cherry tomatoes
1/2 small jicama
1 pound shrimp, peeled and deveined and cooked
6 scallions
1/4 cup orange juice
2 tablespoons lime juice
2 teaspoons honey
1/2 teaspoon cumin
1 tablespoon olive oil
3/4 tsp kosher salt
1/4 tsp black pepper

Recipe Directions for Shrimp and Corn Salad

  1. In a large bowl, combine corn, tomatoes, jicama, shrimp, and scallions

  2. In a separate bowl, whisk together the orange and lime juices, honey, cumin, oil, salt & pepper. Toss with the shrimp mixture
