A light and spicy thai red curry with shrimp

Recipe Ingredients for Shrimp coconut curry

1 teaspoon canola oil
1/2 cup yellow onion
1/2 teaspoon red curry paste
1 teaspoon honey
12 ounces large shrimp
2 teaspoons fish sauce
1/4 cup green onion
2 tablespoon fresh basil
6 oz Lite Coconut Milk
1 cup snow peas
1 cup carrot
1 cup red bell pepper

Recipe Directions for Shrimp coconut curry

Heat oil in a large nonstick skillet over medium-high heat. Add onion, carrot, snow peas, bell pepper, and curry paste to pan, and sauté 1 minute, stirring occasionally. Stir in sugar; sauté 15 seconds. Add shrimp; sauté 3 minutes or until shrimp are done, stirring frequently. Stir in coconut milk and fish sauce; cook 30 seconds or until thoroughly heated. Remove from heat; stir in green onions and basil.
