Look Ma, no fat! By leaving off the roux, this dish becomes a hearty soup that will serve up beautifully with a cobbette of corn and a dinner roll or cornbread.

Recipe Ingredients for Shrimp and Chicken Gumbo

1/2 cup diced green pepper
1/2 cup diced onion
1/2 cup diced celery
1 cup sliced frozen okra
1 tsp old bay seasoning
1 cup diced cooked chicken meat
14 1/2 oz diced tomatoes with juice
2 cups low sodium chicken broth
1/2 cup cooked brown rice
1/2 lb cooked shrimp

Recipe Directions for Shrimp and Chicken Gumbo

  1. Sweat vegetables in a little water; add a bay leaf if you have one. Add chicken meat, tomatoes, chicken broth, and season to taste with black pepper and a capful of liquid crab boil. Simmer 30 minutes.

  2. At serving time, add brown rice and shrimp, simmer 3-4 minutes just to heat through.
