Recipe Ingredients for Shrimp and Cheese Poblanos

1 red bell pepper
8 poblano peppers
2 T olive oil
1 lb chopped shrimp
1/2 tsp salt, divided
5 garlic cloves, minced
1 1/2 tbs flour
1/4 tsp ground red pepper
1/2 cup half-and-half, fat free
3/4 cup fat-free milk
3/4 cup shredded jack or cheddar cheese
2 tbs chopped cilantro
2 tbs lime juice

Recipe Directions for Shrimp and Cheese Poblanos

  1. Preheat broiler

  2. Cut bell pepper in half lengthwise; discard seeds and membranes. Place red peppers skin side up, and whole poblanos on foil-lined sheet. Broil 10 minutes, turning poblanos until blackened. Place peppers in zip-top bag for 10 minutes. Peel all, and finely chop red pepper.

  3. Heat a large skillet over medium. Add oil and coat. Add shrimp to pan and cook until done.

  4. Add garlic and sauté for 30 seconds. Sprinkle with flour and ground red pepper; cook for 1 minute.

  5. SLOWLY add ½ and 1/2 with a whisk. Remove from heat and let stand for 2 minutes.

  6. Add cheese and salt; stir until smooth.

  7. Place 1/3 cup cheese mixture in a bowl; Add bell pepper, shrimp mixture, cilantro, lime juice, and toss to coat.

  8. Stir ¼c milk into reserved cheese mix. Spoon 3 T cheese sauce onto 4 plates.

  9. Spoon 6 T shrimp mix into each poblano pepper.

  10. Pace 2 peppers per plate and serve.
