Shrimp Ceviche Recipe

A lovely cool dish from South America. Serve cold with corn chips.

Recipe Ingredients for Shrimp Ceviche

1 1/2 lbs uncooked shrimp
2 tomatos
1 small cucumber
1 jalepeno pepper
1 avocado
1 cup finely chopped cilantro
1 red onion
1 cup lime juice
3 tbsp lemon juice

Recipe Directions for Shrimp Ceviche

  1. Clean and de-vein the shrimp, removing tails.

  2. In boiling water, blanch the shrimp for 2 minutes. Remove to ice water bath, to stop the cooking process. Cut the shrimp into 1" pieces.

  3. Juice 6 limes. Combine the juice (approx. 1 C) with the shrimp and lemon juice, and allow to sit for half an hour.

  4. In the mean time, chop tomatos, cuke, jalepeno and red onion. Once half an hour has passed, add the veggies to the shrimp mixture, and allow to chill in the fridge for at least an hour, the longer the better.

  5. Chop your cilantro, and avacado. Mix these in just before serving.
