Recipe Ingredients for Shrimp Carbonara

1 lb Linguine
2 lb Cooked Shrimp
1/4 c chopped onion
1/4 c chopped yellow bell pepper
1/4 c chopped red bell pepper
1/4 c chopped orange bell pepper
1/2 c frozen peas
1 can Cream of Mushroom Soup
1 c water
2 egg yolks
1/2 c Parmesan cheese
1 lb bacon

Recipe Directions for Shrimp Carbonara

  1. Boil water for pasta; add linguine when water boils and cook according to package. Drain and add a little olive oil to keep pasta from sticking. Set aside. (Easy enough!)

  2. Either fry or bake (400 degrees F) 1 pound of bacon. Or buy a pound of pre-cooked bacon. Drain fat and cut into bite sized pieces. Set aside.

  3. Add frozen shrimp, onion, peppers and peas into a saute pan and heat until no longer frozen. Drain off excess water. Set aside. (NOTE: I used pre-cooked shrimp. If you also use pre-cooked shrimp, it's very important not to overcook it or it'll be the consistency of rubber.)

  4. In a pot, add soup, water, and egg yolk. Stir together, then cook slowly until warm and starting to bubble. (You do not want the egg to cook too quickly or you'll end up with chunks of egg!)

  5. Add pasta, shrimp mixture and bacon to sauce and stir until combined. Heat thoroughly and then serve immediately.
