Shrimp with green cabbage and linguine

Recipe Ingredients for Shrimp and Cabbage Lo Mein

8 oz linguine
1/4 cup reduced-sodium soy sauce
1/4 cup rice vinegar
2 teaspoons fresh grated ginger
1/2 teaspoon sugar
1/2 teaspoon red pepper flakes
1 tablespoon canola oil
1 lb shrimp
2 garlic cloves
1 head green cabbage, halved, cored, and thinly sliced
1/4 cup cilantro

Recipe Directions for Shrimp and Cabbage Lo Mein

  1. Cook linguine in a large pot of boiling salted water until al dente. Drain, return to pot, and set aside.

  2. In a small bowl, combine soy sauce, vinegar, ginger, sugar, and red pepper flakes; set aside.

  3. While pasta is cooking, heat oil in a large skillet over medium heat. Add shrimp and half the garlic. Season with salt and pepper to taste. Cook, stirring frequently, until shrimp are opaque throughout, about 2-3 minutes. Transfer to a plate (reserve skillet).

  4. Place cabbage, remaining garlic, and 1/2 cup water in skilet. Cook, stirring occasionally, until cabbage is crisp-tender, 6-7 minutes. Add cabbage, soy sauce mixture, and shrimp to the pot with the linguine; toss to combine. Garnish with cilantro for serving.
