Shrimp and Butternut Squash Recipe

Before preparing the recipe, I take an hour to prepare the raw, whole butternut squash. I preheat the oven to 350 degrees. I fill a 13" x 9" glass pan with an inch of water. I cut the squash in half lengthwise, dig out the seeds, and rub the fleshy side of each half with olive oil and salt. I place both halfs, fleshy side up in the pan, cover and seal it with foil, and bake it for one hour.

Recipe Ingredients for Shrimp and Butternut Squash

4 cups butternut squash, baked with salt
2 cups chopped raw asparagus
16 ounces frozen shrimp
4 tablespoons olive oil
0.12 tablespoon (hefty 1/4 tsp) minced garlic
2 grams parsley seasoning
1/4 cup shredded reduced fat cheddar

Recipe Directions for Shrimp and Butternut Squash

  1. Mix oil, garlic, and parsley in a large bowl. Add chopped, prepared butternut squash, chopped asparagus, and thawed shrimp. Toss and coat ingredients gently with oil mixture.

  2. Transfer mixture to an ungreased, 2 quart baking dish. Bake uncovered at 400 degrees for 20 minutes. Sprinkle cheese evenly on top and bake for 5 minutes more.
