Recipe Ingredients for Shrimp and Broccoli Noodle Salad

1 lb broccoli, cut into florets
4 oz bean threads
10 g ginger root, 1 inch piece
10 oz shrimp,cooked and peeled
1/4 cup rice vinegar
2 tbsp sugar
1 tbsp olive oil
1 tsp toasted sesame oil
1/2 tsp salt
1/4 tsp pepper
1 tbsp water

Recipe Directions for Shrimp and Broccoli Noodle Salad

  1. Steam broccoli until crisp-tender. Cool slightly and transfer to a large bowl. Set aside.

  2. Add bean threads to a saucepan of boiling water, then remove from heat. Cut ginger into thin strips and add to saucepan. Let stand for 2 to 3 minutes until noodles are pliable. drain. Rinse with cool water. Drain well. Toss noodle mixture and shrimp into broccoli.

  3. For dressing stir together the vinegar, sugar, olive oile, sesame oil, salt , pepper and water. Gently toss dressing into broccoli mixture until well coated.
