Recipe Ingredients for Shrimp, black bean and mango salad

8 oz dry Black beans, cooked, rinsed and drained
1 red bell pepper, seeded and chopped
1 mango, peeled and cut into 1/2 inch dice
1/2 cup thinly sliced scallions, plus 1/4 cup
1/2 cup chopped cilantro
12 oz cooked shrimp
1/4 cup lime juice
1/4 cup orange juice
3 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
2 teaspoons dijon mustard, grainy
2 garlic cloves, minced
2 teaspoons ground cumin
2 teaspoons chili powder
1/4 teaspoon black pepper
1/2 teaspoon salt
6 cups spinach leaves, torn
