This salad is really good with a Pear Gorgonzola Vinagrette (Litehouse) but would be good with any dressing.

2 cups Butter Lettuce
1/8 lb small Shrimp
1/2 Grapefruit - Pink
1/2 Tomato
1/2 Avocado
1 Scallion

  1. Dice grapefruit, tomato, avocado, and scallion

  2. Toss all ingredients together

  3. Use dressing of your choice
