Modified from a Food Network recipe

Recipe Ingredients for Shrimp & Asparagus Risotto

5 cups fat free chicken broth
2 tsp. extra virgin olive oil
3/4 cup diced onion
1/4 tsp. salt
1/4 tsp. black pepper
1 1/2 cups Arborio rice
3/4 cup white wine
1/4 cup grated parmesan cheese
1 lb. asparagus
1 lb. shrimp

Recipe Directions for Shrimp & Asparagus Risotto

  1. Heat the olive oil and add the onion. Saute until tender.

  2. Add the rice, salt and pepper and stir to coat. Add the wine and simmer until the wine has almost completely evaporated, about 1 mins.

  3. Add 1/2 cup of the chicken broth at a time and stir until completely absorbed, about 2 mins.

  4. When you have about 1 cup of broth left, add the shrimp and asparagus (cut int 1 inch pieces).

  5. Continue adding broth and cook aon additional 5-8 mins or until the shrimp is cooked and asparagus is tender but crisp.

  6. Remove from heat, add parmesan. Stir and serve.
