Recipe Ingredients for shrimp and asparagus pasta topper

10 spears asparagus
1 lb shrimp
1 red pepper
1 tsp garlic
2 oz bacon
2 tblsp olive oil
1/4 cup skim milk
2 tblsp capers
2 oz asiago cheese

Recipe Directions for shrimp and asparagus pasta topper

  1. Preheat oven to 450 degrees. Cut asparagus into bite sized pieces; lay on a small jelly roll pan and season with salt and pepper, then sprinkle with 1 tblsp. of the olive oil; toss to distribute oil and seasonings. Roast in oven for approx. 6 minutes.

  2. While the asparagus is roasting, cut bacon into bite-sized pieces and fry in large frying pan. Add the remaining olive oil to the pan along with the bacon; add garlic and red pepper chopped finely.

  3. Heat thoroughly and add milk, stir to combine. Add asparagus from oven and the shrimp. Cook aprox. 10 minutes, until shrimp is cooked thoroughly.

  4. Turn off heat and add capers, toss to combine well. Serve over pasta with cheese sprinkled over the top.
