Great shrimp and asparagus frttatta. Can use egg substitute instead of egg whites or 4 eggs.

Recipe Ingredients for Shrimp and asparagus Fittatta

7 egg whites
1 egg
1 tbsp olive oil
1 tablespoon parsley, chopped
2 tablespoons lemon zest
1 tablespoon lemon juice
1 pinch of red chili pepper flakes
2 tbsp freshly grated Parmesan cheese
6 asparagus spears, cut in 2? pieces
10 large shrimp, shelled (defrosted if frozen)
1/2 cup mozzarella cheese

Recipe Directions for Shrimp and asparagus Fittatta

  1. Mix egg, olive oil, lemon zest, juice and parmesan cheese.

  2. Spray pan with Pam.

  3. Cook shrimp and asparagus. Add egg mixture and stir until set.

  4. Sprinkle with cheese (can use any cheese).

  5. Put in 425 degree oven for about five minutes.

  6. Enjoy!
