Recipe Ingredients for Shrimp-Artichoke Frittata

4 ounces shrimp
4 1/2 ounces artichoke hearts
2 cups egg substitute
1/4 cup skim milk
1/4 cup green onion, sliced thin
1/8 teaspoon garlic powder
1/8 teaspoon pepper
3 tablespoons parmesan cheese, grated fine
1 small tomato

Recipe Directions for Shrimp-Artichoke Frittata

  1. Thaw, peel and devein shrimp. Rinse shrimp; pat dry with paper towl. Halve shrimp lenghtwise; set aside.

  2. Cook artichokes according to package directions; drain. Cut hearts into quarters; set aside.

  3. In a bowl combine egg product, milk, green onions, garlic powder and pepper. Set aside.

  4. Lightly coat an unheated large nonstick skillet with nonstick cooking spra. Heat skillet. Cook shrimp in hot skillet for 1 to 3 minutes or until shrimp turn opaque.

  5. Pour egg mixture into skillet; do not stir. Place skillet over medium low heat. As the egg mixture sets, run a spatula around the edge of the skillet, lifting egg mixture edge until mixture is almost set but still glossy and moist.

  6. Remove from heat; sprinkle with artichoke pieces evenly over top. Sprinkle with parmesan cheese. Coverand let stand 3 to 4 minutes oruntil top os set.

  7. To serve loosen edge of frittata. Transfer to a serving platter; cut into wedges. If desired, garnish with tomato slices.
