From Donna-Marie Pye's "300 Slow Cooker Favourites". This creamy, stew-like chili is different form the typical red tomato-based versions. Nevertheless, the flavours are bold, making it a delicious alternative. Serve it with steamed rice or bread.

Recipe Ingredients for Shredded White Chicken Chili

3 tbsp vegetable oil, divided
2 lbs boneless skinless chicken thighs
1 large onion, finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp freshly ground black pepper
1/4 tsp cayenne pepper
284 ml condensed chicken broth, undiluted
1080 ml white kidney beans, drained and rinsed
1 l beans
254 ml chopped mild green chilies, including liquid
1 tsp salt
1 cup sour cream
1/2 cup whipping cream (35%)
1 cup shredded Monterey Jack cheese

Recipe Directions for Shredded White Chicken Chili

  1. In a large nonstick skillet, heat 2 tbsp oil over medium-high heat. Add chicken and cook for 5 to 7 minutes per side, or until browned. Place chicken in slow cooker stoneware.

  2. Add remaining oil to skillet and heat. Add onion, garlic, cumin, oregano, black pepper and cayenne. Cook, stirring, for 3 minutes, or until onion is softened. Transfer to slow cooker.

  3. Pour chicken broth into skillet and bring to a boil, scraping up any browned bits. Pour over chicken and seasonings in slow cooker.

  4. Cover and cook on Low for 5 to 7 hours or on High for 3 to 4 hours, until hot and bubbling and chicken is no longer pink inside.

  5. Remove chicken from slow cooker and shred with a fork. Return shredded chicken to slow cooker. Stir in beans, chilies, salt, sour cream and whipping cream. Cover and cook on High for 15 to 20 minutes longer, or until heated through.

  6. Spoon into serving bowls and sprinkle with shredded cheese.
