Chicken with "guiso", that is, a tomato/onion based sauce.

Recipe Ingredients for Shredded "Pollo with guiso"

4 ounce chicken leg quarter
1 7/10 g Adobo with Pepper
1 tbsp vegetable oil
1 tsp salt
1/2 onion, chopped
1 roma tomato, chopped
1/4 cup red wine
1/4 cup heavy cream
1/2 tsp ground cumin
1/2 tsp curry

Recipe Directions for Shredded "Pollo with guiso"

  1. Season the chicken with the adobo.

  2. In a sautee pan, put the oil to heat until it runs fast (e.g. it moves like water when you tilt the pan).

  3. Sear the chicken for about one minute each side.

  4. Get some water boiling and add the salt to it.

  5. When the water has boiled, put the chicken in it.

  6. In the pan where you had the chicken, sautee the onions until they have browned a bit, then add the tomato and let it sautee for about an extra minute.

  7. Deglass the pan with the wine, and let it reduce in half.

  8. Add the heavy cream and let the sauce thicken a bit.

  9. Add the cumin and curry and taste. Add salt and pepper to your liking.

  10. When the chicken is completely cooked, shred it with a fork into small bite pieces.

  11. Mix the chicken pieces with the sauce and serve.
