A savory recipe for authentic shredded chicken tacos.

Recipe Ingredients for Shredded Chicken Tacos

5 cups chicken breast, shredded (approx. 3 breasts)
2 cups chicken broth
2 cup diced tomato (approx. 3-5 tomatoes)
1/3 cup diced onion
3 tbsp minced garlic
2 jalapeno peppers
3 tbsp chopped coriander
1 tsp salt
1 tsp pepper
18 corn tortillas

Recipe Directions for Shredded Chicken Tacos

  1. Boil the chicken for 30-40 minutes.

  2. When done boiling, reserve two cups of chicken broth and shred the chicken, discarding the skin and bones.

  3. Roast the jalapenos over an open flame until tender and blackened on all sides. Let cool then remove stems and peel off blackened skin.

  4. Add the broth, tomatoes, onion, garlic, coriander (cilantro), jalapenos, salt, and pepper to a blender and puree for 1-3 minutes (depending on the efficiency of your blender.)

  5. Place shredded chicken and puree in a skillet or sauce pan and simmer for 45 minutes on low heat, stirring occasionally.

  6. Serve with warm corn tortillas and your choice of toppings.
