Thai - the heat is adjustable - use more or less curry paste.

Recipe Ingredients for shredded chicken and mixed mushrooms (Thai)

2 tbs. peanut oil
14 oz. chicken breasts
1 cup red onion
2 garlic cloves
2 tsp ginger
12 oz. mushrooms
2 tbs. green curry paste
2 tbs. tamari
4 tbs parsley
2 cups jasmine rice

Recipe Directions for shredded chicken and mixed mushrooms (Thai)

Saute chicken in oil til done through. remove and shred. set aside. pour off excess oil, then stir fry sliced onion with minced garlic and ginger 1-2 minutes; add mushrooms (any mix you like) until they start to brown - 3-4 minutes. Add curry past, tamari, and chicken. Stir fry 2-3 minutes. add parsley and serve on cooked rice.
