This is a great one dish meal. You can bake your tortillas for chips or use them as is, for a burrito wrap.

Recipe Ingredients for Shredded Beef Nachos with Avocado Cream

16 oz shredded Beef Roast, Round, 0" Fat, Choice - Cooked, Roasted
8 oz V8 100% Vegetable Juice
1 tsp Chili Powder
1 tbsp Onion Powder
1/2 tsp Garlic Powder
1 Salt
1 Pepper
1/4 cup water
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1/2 large sweet onion, cut into strips
1 Avocado
6 oz Greek Yogurt
2 tbsp Onion
1 clove garlic
171 g Cilantro
2 tsp Old El Paso Seasoning Mix Taco Original
1/2 (67 g) Lime, juiced (fruit+(2"+dia))
6 cups shredded Romain Lettuce
3 diced tomatoes
414 gram 6- 10" Flour Tortillas
6 sprays Pam Cooking Spray

Recipe Directions for Shredded Beef Nachos with Avocado Cream

  1. In a small pan simmer shredded beef, v8, chili powder, onion powder, garlic powder, and water until the liquid reduces to a sauce. Season to taste with salt and pepper.

  2. Preheat oven to 375*F. Take tortillas and spray with a little cooking spray, season if desired. Cut into nacho chip size, and spread on 2 baking sheets. Bake for 10-15 minutes or until the tortillas are crisp.

  3. Heat a non stick pan on medium high heat. Spray with a little cooking spray and sautee onions for a minute, then add the peppers and cook through.

  4. Meanwhile, place the avocado, yogurt, onion, cilantro, taco seasoning, and the juice from 1/2 a lime in a food processor and pulse into a cream. Place in a zip top bag and seal. Trim a small tip off a bottom corner of the bag, and use to squeeze over nachos.

  5. Plate up the Nachos, top with shredded beef, shredded, peppers & onions, lettuce, tomatoes, and squeeze the avocodo cream on top.
