Shortcut Chicken Mole from Cookbook, with a couple changes

Recipe Ingredients for Shortcut Chicken Mole

1 1/2 cups brown rice
2 boneless skinless chicken breasts
1 tbsp cooking oil
1 tbsp unsweetened cocoa powder
1 tsp ground cumin
16 ounce chunky salsa
1/2 green bell pepper

Recipe Directions for Shortcut Chicken Mole

  1. Cook rice

  2. cook and stir chicken in oil until light brown

  3. drain fat

  4. sprinkle chicken with cocoa powder and cumin

  5. stir in salsa and bell pepper

  6. bring to boiling, reduce heat

  7. simmer , covered for about 5 minutes

  8. service chicken mixture with hot cooked rice
